
What you will need:
• One Champagne coupe glass (I prefer this over a flute)
• Lavender rimming sugar
• Lavender simple syrup for rimming the glass
• 1 oz gin (I prefer The Botanist gin, but will never turn down Empress Gin for a purple color)
• ½ ounce fresh lemon juice (about half a lemon)
• ½ ounce lavender simple syrup
• 2-3 oz of Champagne or Prosecco
• Ice
• Lemon twist for garnish
To make:
In a shallow dish or bowl with about an ounce of lavender simple syrup, carefully dip the rim of the glass. Do not use too much, or the syrup will drip down the glass. In another shallow dish with a layer of lavender rimming sugar, dip the glass rim to cover the edge with the rimming sugar. This should create a lovely lavender rim to make your cocktail look very special. Set aside until you are ready to pour your drink into this glass.
Fill a cocktail shaker with ice. Add the gin, simple syrup, and lemon juice. Shake until the outside of the shaker is cold. Strain the shaker ingredients into the coupe glass and then pour the Champagne over the mixture. You will hear a satisfying fizz as the Champagne hits the mixture. Stir slightly and add a lemon twist garnish.
