Keva's Confetti Salad

This bright summer salad is always a crowd pleaser. The colorful ingredients resemble party confetti, and thus the name. (Recipe yields 6 servings)

Ingredients

  • 1 head of red leaf lettuce
  • 1 head of green leaf lettuce
  • 3 scallions sliced thin on the diameter
  • 3/4 cup od carrots diced
  • 3/4 cup cucumber, peeled, seeded and diced
  • 3/4 cup of yellow bell pepper
  • 1/2 cup of dried unsweetened cranberries
  • 1 medium avocado ripe but firm diced
  • 1/2 pinions or sunflower seeds
  • 1/2 cup shaved or shredded parmesan

For the Dressing

  • 2 TBS shrub or white wine vinegar
  • 1 TS Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

1. Wash and spin dry lettuce. Tear up the lettuce into pieces and place in a large salad bowl. Make sure lettuce is dry and crisp.

2. In a small mixing bowl, whisk together vinegar, dijon mustard, salt (optional) and pepper, incorporating all the ingredients. Continue whisking and drizzle in olive oil until the mixture is creamy and well incorporated. Set aside.

3. Add all the vegetable ingredients. Pour the vinaigrette dressing all over the salad. Toss and serve immediately.
